Pineapple Crock Pot Baked Beans

This recipe combines canned baked beans, red kidney beans, pineapple tidbits, bacon, and vegetables to make a sweet and savory slow-cooked bean dish. The mixture simmers in a crock pot with garlic, ketchup, mustard, molasses, and hot sauce, producing tender beans infused with smoky bacon and fruity pineapple accents.

Description

Pineapple Crock Pot Baked Beans blend several varieties of canned beans with crisp bacon, fresh onion, green pepper, and pineapple tidbits in a slow cooker. The bacon is first cooked to a crispy texture, infusing the dish with smoky richness. Onion is softened in the residual bacon fat before all ingredients are combined with garlic, ketchup, Dijon mustard, molasses, and hot sauce.

Cooked slowly on high or low settings for several hours, the beans absorb the mixture's sweet, tangy, and slightly spicy flavors. Pineapple provides a bright fruitiness which contrasts with the savory and smoky bacon notes. For thicker beans, the lid can be removed near the end to let excess liquid cook off. The resulting dish offers a hearty accompaniment or main course with balanced textures and flavors.

These baked beans can be kept warm for hours, and if they become too thick, hot water may be added to loosen the texture. The recipe’s use of canned beans and simple ingredients makes it convenient for casual cooking and feeding a crowd.

  • If the baked beans thicken too much, stir in hot water to adjust consistency before serving.
