Pineapple Jam
Description
Pineapple Jam begins by blending peeled fresh pineapple or well-drained canned pineapple into a mushy form. The crushed fruit is combined with sugar and optionally cloves in a deep nonstick pan. The mixture is cooked slowly over medium to low heat, stirring constantly to prevent scorching, until most liquid evaporates and the jam thickens, turning a golden color.
The jam balances the natural sweetness and acidity of pineapple, with cloves adding a gentle warm spice note if used. Cooking results in a dense, spreadable preserve that captures key pineapple flavors without additional preservatives.
Serve Pineapple Jam on toast, biscuits, or use it as a filling in baked goods. Adjust sugar according to taste during cooking. After cooking, cool the jam in the refrigerator to set before storing.
Constant stirring is essential to prevent burning and ensure even cooking.
Ingredients
- 3 cans pineapple sliced; in water or 2 fresh pineapples (20 oz./560 g
- 10 tablespoons sugar more or less to taste
- 1/2 tablespoon cloves optional
Instructions
- If you are using canned pineapple slices, drain them and squeeze out any excess water or juice with your hands. Blend the canned pineapple until it is mushy, about 10 seconds. If you are using fresh pineapple, remove the skin, cut it into pieces, and blend for 10 seconds.
- Transfer the blended pineapple to a deep pan (preferably non-stick). Add the sugar and cloves, and stir well. Cook over medium to low heat until most of the liquid has evaporated and the pineapple jam turns golden in color.
- Stir constantly to avoid burning. Taste and add more sugar as needed. Remove and discard the cloves, then let the mixture cool in the fridge.
Notes
- Use fresh or canned pineapple, but ensure canned fruit is well-drained to avoid excess liquid.
- Stir continuously during cooking to prevent the jam from sticking or burning.
- Adjust sugar amounts to taste as the jam cooks and thickens.
- Remove whole cloves before storing the jam to avoid overpowering flavor.
- Cool the jam completely before refrigerating for the best texture.
