Pineapple Mojito

The Pineapple Mojito is a refreshing cocktail blending ripe pineapple chunks, sugar, fresh mint, lime juice, pineapple juice, club soda, and white rum. Muddling pineapple, mint, sugar, and lime juice releases bright, tropical flavors before mixing with juices and rum. Served over ice and garnished with mint and pineapple, it offers a crisp, fruity drink with herbal mint notes.

Description

The Pineapple Mojito cocktail starts by muddling ripe, fresh pineapple chunks with sugar (or simple syrup or brown sugar), chopped mint leaves, and fresh lime juice to create a creamy and aromatic base. This mixture is combined with pineapple juice, club soda, and white rum (or coconut rum for added tropical flavor), stirring to unify the tropical fruitiness with the fresh herb and citrus brightness. Served over plenty of ice, the drink is garnished with fresh mint sprigs, lime wedges, and pieces of pineapple for a visually appealing, refreshing beverage. The process emphasizes fresh ingredients and balanced flavors without shaking, preserving the carbonation from club soda for a light effect. This mojito variation offers a tropical twist on the classic mint and lime combination, suitable for warm weather or casual gatherings.
