Pineapple Rum Ham
Description
The Pineapple Rum Ham recipe begins by preparing a 4 to 5 pound bone-in fully cooked ham shank with a decorative and flavorful clove-studded scoring on the fat. The glaze combines pineapple tidbits with mustard, brown sugar, and spiced rum that infuses the meat during slow roasting at 300°F. Covering the ham tightly with foil locks in moisture to produce a juicy texture despite the long cooking time, which is around three hours or until the internal temperature reaches 145°F.
The flavor combines savory saltiness from the ham with sweetness from brown sugar and pineapple, enhanced by a subtle kick from the spiced rum. Cloves add fragrance and depth. Once roasted, the ham rests while the pan dripping glaze is thickened with cornstarch and water, creating a smooth sauce to pour over slices.
This ham pairs well with hearty side dishes and is ideal for festive dinners. The rich glaze intensifies the classic ham taste with complex sweet and spiced notes. The recipe requires patience during the slow roast but yields a well-glazed ham with tender, flavorful meat and a moist finish.
Note that the calorie count calculated may be inaccurate due to calculator limitations, so consider adjustments separately if tracking nutrition. Overall, this method focuses on slow, moist cooking with a sweet and spiced fruit glaze for a distinctive ham presentation.
Ingredients
- 1 ham shank 4-5 pound bone-in fully cooked
- 10 clove or as needed, whole
- 1/4 cup mustard
- 2/3 cup brown sugar
- 1 pineapple tidbits 15 ounce can, undrained
- 8 fluid ounces spiced rum
- 2 tablespoons cornstarch or as needed
- 1/4 cup water
Instructions
- Preheat your oven to 300 °F.
- Place the ham into a roasting pan or Dutch oven. Take a knife and scour the top fat, making sure to cut around 1/3 of an inch deep. Make a grid pattern with squares approximately an inch wide and tall. Place a whole clove into the corners of the cut ham. ( see video for how to do it)
- Mix together the pineapple tidbits, mustard, brown sugar and rum until combined. Pour over the ham. Cover the ham in tinfoil ( this is the trick to moist, juicy ham) and place in the oven.
- Cook until an instant-read meat thermometer inserted into the thickest part of the ham, not touching bone, reads at least 145 °F. My hams take around 3 hours. Transfer ham to a serving platter, leaving pan drippings in roasting pan and cover with tinfoil. Let the ham rest while you prepare the sauce.
- Whisk the cornstarch and water together in a small bowl until smooth. Place the roasting pan or Dutch Oven on a stove element over medium-low heat and whisk the cornstarch slurry in until the juices thicken, about 5 minutes. Serve the sauce with ham.
Notes
- Score the ham fat deeply enough to hold cloves securely without cutting too deeply into meat.
- Covering the ham tightly with foil during roasting keeps it moist and juicy over the long cook time.
- Use an instant-read thermometer to ensure the ham reaches a safe temperature of at least 145°F internally.
- Whisk the cornstarch slurry smoothly before adding to pan to avoid lumps when thickening the sauce.
