  • 1-2 jalapeno pepper seeded and finely chopped (about 1/4 cup or more to taste. see note 4
  • 1 tablespoon lime juice from 1 lime
  • salt freshly ground
  • black pepper freshly ground
  • hot pepper sauce to taste, optional
  • tortilla chips for serving

Instructions

  1. In a large bowl, combine pineapple, tomatoes, cilantro, red onion, and jalapeños. Add lime juice and toss to coat.
  2. Season to taste with salt, pepper, and hot pepper sauce, if using. For best results, allow flavors to blend at room temperature for at least 10 minutes or chill until serving time. Serve with tortilla chips.
