Pinto Bean Soup Recipe

This is an easy pinto bean soup recipe that can be made in the crockpot, on the stove top or even in the oven.  Your family will go wild over it!

Ingredients

  • 1 onion minced
  • 4 garlic minced, cloves
  • ½ talk celery cut into small pieces
  • 2 tablespoon vegetable oil
  • 1 lb ground beef
  • ½ lb pork sausage
  • 1 .5 oz pinto beans canned
  • 1 .5 oz diced tomatoes fire roasted garlic are especially good, canned
  • 1 oz rotel tomatoes and diced green chilis use hot if you like a hotter soup
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoon kosher salt 1 teaspoon if regular table salt
  • 1 teaspoon black pepper ground
  • 1 .5 oz green chili chopped
  • 4 tablespoon molasses
  • 1 tablespoon chicken stock concentrate 4 bouillon cubes if you don't have concentrate
  • 1 tablespoon cumin
  • ¼ teaspoon Turmeric
  • ½ cup water

Instructions

  1. Brown the onions, garlic and celery in 2 tbs vegetable oil over medium heat in a skillet. When soft (in about 3-4 minutes) add the ground hamburger and the ground pork sausage to the onion mix and cook over medium heat till browned (another 3-4 mins)
  2. Add the hamburger and onions mix to a crockpot and then add everything else to the crockpot and stir well.
  3. Cook in the crockpot on low heat for 8 hours or high heat for 4 hours.

Notes

  • Serve with sour cream, shredded sharp cheddar cheese and corn chips or serve over pasta or rice. Add garlic salt if needed. Garnish with chives. You can also cook on the stove top in a large sauce pot - heat over medium heat until heated through. (an hour)
  • If you prefer not to use Pinto beans then cannellini or navy beans work great.  Kidney beans will also work. 
  • You can substitute brown sugar for the molasses if needed
  • Substitute chicken boullion cubes for the broth concentrate if you need to. 
  • You can substitute chicken or ham for the ground beef. 
  • Another nice way to kick this up is to add crispy bacon either on top or allow it to cook with the soup.  Adds smokiness
  • If you just want smokiness and not the bacon, add a few drops of liquid smoke.  Be careful, that stuff is very strong. 
  • Add an extra can of beans and a 4.5 ounce can of chopped green chilis to expand the recipe and make it go farther.
