  • 1 1/2 pound salmon fillet skin on, whole
  • salt Kosher salt and freshly ground
  • black pepper Kosher salt and freshly ground
  • 1 tablespoon lemon juice fresh
  • 2 teaspoons olive oil
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced, fresh
  • 1/4 cup panko
  • 1/3 cup pistachio crushed
  • 2 tablespoons Parmesan Cheese freshly grated
  • lemon zest of 1
  • lemon for serving, optional, wedges

Instructions

  1. Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper.
  2. Place the salmon fillet on the prepared baking sheet and pat dry with paper towels. Season with salt and pepper. Set aside.
  3. In a small bowl, whisk together the lemon juice, olive oil, honey, Dijon mustard, and garlic.
  4. In a small bowl, combine the panko, crushed pistachios, Parmesan cheese, and lemon zest. Set aside.
  5. Drizzle the lemon honey mixture evenly over the salmon. It is ok if some of it runs off. Sprinkle the pistachio mixture evenly on top of the salmon. Gently press down so it sticks.
  6. Place the pan in the oven and bake for 10 to 14 minutes or until the salmon flakes with a fork, the internal temperature should be between 125 to 130 degrees F. Time will vary depending on the thickness of the salmon.
  7. Remove from the oven and serve immediately.
