  • ½ cup pistachio butter
  • ¼ cup butter
  • 1 cup white sugar organic for vegan-friendly
  • 2 egg large
  • 2 tsp vanilla extract
  • 1 ½ cups flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ½ cup pistachio unsalted
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 350°F. Lightly grease or line a muffin tray with papers.
  2. In a large bowl, beat the pistachio butter, butter, and sugar together until creamy.
  3. Add the eggs and vanilla, then beat until light and fluffy.
  4. Add the flour, baking powder, and salt to the butter mixture and stir until mostly combined. Then add the milk and stir until smooth.
  5. Fold in the chocolate chips and pistachios until evenly distributed.
  6. Fill each muffin tray cavity with batter.
  7. Bake muffins in the preheated oven for 18–20 minutes or until a toothpick inserted in the center comes out clean.
