  • ½ onion large
  • 8-10 prigs of parsley roughly chopped

For the dressing:

  • 3 tbsp olive oil
  • ½ lemon juice freshly squeezed
  • 1 tbsp apple cider vinegar
  • 1 tsp sumac
  • 1 tsp salt
  • 1/4 cup tahini (optional)

For serving:

  • 1 egg hard-boiled
  • parsley roughly chopped

Instructions

  1. Thinly slice the onion, sprinkle it with salt, then rub it between your hands to soften it. Transfer to a mixing bowl.
  2. Add the tomato, onion, parsley and beans to the onion in the mixing in bowl.
  3. Add the olive oil, lemon juice, vinegar, sumac, and salt. Toss well until combined.
