Description

The recipe starts by browning ground Italian sausage in a skillet, then removing it while leaving the drippings. These vegetables are combined back with the sausage and mixed with pizza sauce to form the flavorful filling.

This filling is portioned into small oven-safe bowls or ramekins, each topped with shredded mozzarella and pepperoni slices, then baked at 450°F until the cheese bubbles and turns golden. The result is a hot, melted, and savory dish that captures the essence of pizza without dough.

  • 1 ½ cups mozzarella cheese shredded
  • 1 cup pizza sauce
  • 1 pound Italian sausage ground
  • 8 ounces baby bella mushroom sliced
  • ½ green bell pepper chopped
  • cup pepperoni slices
  • ¼ cup black olives sliced
  • 1 tablespoon butter

Instructions

  1. Heat a cast iron skillet (or other skillet) to medium and add in the ground sausage.
  2. Brown the sausage, then remove and add to a large mixing bowl.
  3. Leaving the drippings in the pan, add in the butter and mushrooms. Also preheat your oven to 450°F.
  4. Sauté until they are cooked through, then add in the green pepper and sauté for 2 minutes. Turn off the heat and pour them into the bowl with the cooked sausage. Stir in the pizza sauce.
  5. Divide the filling into 6 equal portions and pour them into 6 small oven-safe bowls or ramekins. Top with the shredded mozzarella cheese and slices of pepperoni.
  6. Bake for 12-15 minutes or until the cheese is golden and bubbly. Allow to cool slightly before serving.

Notes

  • You can make your own low-carb pizza sauce in about 5 minutes or select a low-carb store-bought alternative with minimal sugar.
  • If preferred, assemble and heat the pizza bowls in the microwave using microwave-safe bowls; cover to prevent splattering.
  • Microwave heating should last about 1 to 1½ minutes or until the cheese is fully melted.
