Pizza Quesadilla
Description
This recipe begins by spreading pizza sauce over flour tortillas, then sprinkling Italian seasoning, shredded mozzarella or Italian cheese blend, and chosen toppings on half of each tortilla. Folding it over encloses the filling, creating a half-moon shape. Cooking in a buttered or greased skillet for a few minutes each side crisps the tortilla and melts the cheese inside.
The quesadilla features a contrast of textures: a toasted, slightly crisp tortilla exterior and a molten, cheesy interior with familiar pizza flavors. Italian herbs and varied toppings such as pepperoni, olives, or peppers add depth and customization.
Serve the quesadilla cut into wedges and provide extra pizza sauce or ranch for dipping. It makes a versatile snack or casual meal. Choose freshly shredded cheese to maximize melt quality. Flour tortillas preferred for their pliability and flavor.
For freezing, assemble and flash freeze quesadillas laid flat, then store in airtight containers up to two months. Reheat in an oven at 350°F until hot. Gluten-free tortillas can be substituted for dietary needs.
Ingredients
- 4 large flour tortilla
- 1 cup pizza sauce , plus more for dipping, if desired
- 3 cups cheese mozzarella or Italian blend, shredded
- 1 teaspoon Italian seasoning
Optional Topping Ideas:
- pepperoni
- olives sliced
- ground sausage
- onion
- bell pepper
- jalapeno pepper or sweet pepper ring, or yellow peppers
- baby spinach leaves
- mushrooms sliced, fresh
Instructions
- Spread a thin layer of pizza sauce over each tortilla.
- On one half of a tortilla, sprinkle a little bit of Italian seasoning, cheese, and other desired toppings. Fold the tortilla in half, bringing the half without toppings up and folding it over the top.
- Grease a skillet with a little bit of butter or non-stick cooking spray. Cook filled tortilla for 2-3 minutes on each side, flipping once, until toasted on the outside and cheese is melted in the center.
- Remove from heat, cut into wedges and serve. Dip in extra marinara sauce or ranch, if desired.
Notes
- Freshly shred cheese from a block for better melting and flavor than pre-shredded varieties.
- Use uncooked flour tortillas like Tortilla Land or Fresca brands for best taste and texture.
- To freeze, flash freeze assembled quesadillas on a lined sheet pan for 1 hour, then store airtight for up to 2 months; reheat in oven at 350°F for 15 minutes.
- Gluten-free tortillas can replace regular flour tortillas if needed.
