Description
This recipe uses boneless, skinless chicken breasts flattened to about a quarter-inch thickness, allowing for even cooking and easy rolling. Each breast is topped with pepperoni slices and mozzarella string cheese, then rolled and secured with toothpicks. After coating in a garlic butter mixture and seasoned breadcrumbs, the chicken rolls are baked until cooked through and golden.

Ingredients
- 4 chicken breast 6 oz each, boneless skinless
- salt to taste
- black pepper to taste
- 24 lices pepperoni
- 4 mozzarella cheese strings
- 3 tablespoons butter melted
- 1 clove garlic minced
- 1 cup seasoned bread crumbs
- ½ teaspoon oregano dried
- ½ teaspoon black pepper
- ¾ cup pizza sauce
- ½ cup mozzarella cheese shredded
- cooking spray
Instructions
- Preheat oven to 350°F.
- Pound chicken to ¼" thickness. Season with salt and pepper.
- Top each chicken breast with 5 slices of pepperoni and one cheese string (cut in half if needed). Roll the chicken up lengthwise and secure the ends with toothpicks.
- Combine the melted butter and garlic in a small dish. Mix the breadcrumbs with seasonings and put them in a separate dish.
- Dip each chicken roll in the butter mixture and then into the breadcrumbs evenly coating the chicken.
- Spray chicken with cooking spray and place in a greased 9x13 dish. Bake for 30 minutes.
- Remove from the oven and top with pizza sauce, mozzarella, and 1 slice of pepperoni. Return to the oven and bake for 10 more minutes or until it reaches 165°F.
