Description

The process begins with room-temperature pizza dough divided into small rounds roughly 8 inches across. Each round is brushed with oil and placed oiled-side down in a preheated waffle iron. A layer of tomato sauce, shredded mozzarella cheese, and sliced pepperoni is added, then topped with another dough layer brushed with oil. After cooking for about 6 to 8 minutes, the waffle develops a crispy, golden exterior that encases a bubbling, cheesy filling. Optional fresh basil adds a bright note on serving.

  • 1 batch pizza dough everyday style

Filling:

  • 125 ml tomato sauce
  • 85 g mozzarella cheese shredded
  • 48 pcs (135g) pepperoni sliced
  • cooking oil for greasing waffle iron and brushing on dough

Garnish:

  • basil optional

Instructions

  1. Remove pizza dough from refrigerator about 2 hours ahead of time (to let the dough come to room temperature), unless making fresh pizza dough.
  2. Preheat waffle iron to medium high heat.
  3. Divide pizza dough into 8 small pieces (first divide in half, and then each piece into quarters). Flatten out and shape into approximately 8" in diameter. (Keep in mind the dough will expand a little while cooking).
  4. Brush a little bit of oil on one side of the dough and place the oiled side down into the waffle maker. Or you can spray a little oil on the waffle iron.
  5. Working quickly, top with 2 tablespoon of tomato sauce, shredded mozzarella cheese, and sliced pepperoni.
  6. Place another mound of dough on top and brush the surface with oil before closing the waffle maker.
  7. Cook for 6-8 minutes until crisp and bubbly.
  8. Remove and let cool on a cooling rack.
  9. Sprinkle with fresh basil and serve hot with marinara sauce.
