Description
Pizzadillas blend the convenience of tortillas with classic pizza ingredients such as mozzarella cheese, pizza sauce, peppers, onions, and olives. The assembly involves spreading sauce and layering toppings on half the tortilla before folding and pressing it into a half-circle shape. Cooking in a medium-heat skillet crisps the tortilla exterior on both sides while melting the cheese inside, producing a contrast of textures with a warm, gooey center surrounded by a crunchy crust.

To achieve a crispier crust, a light coating of cooking oil sprayed on the pan before cooking is recommended. Ingredients
- 4 or 10-inch flour tortillas
- 2 cups mozzarella cheese shredded
- ½ green pepper thinly sliced
- ½ red onion thinly sliced
- 2.25 oz black olives drained, canned, sliced
- 4 tablespoons pizza sauce plus more for serving
Instructions
- Spread about 1 tablespoon of pizza sauce over half of each tortilla. Sprinkle about ¼ cup of mozzarella cheese over the sauce. Top with the green peppers, red onions and black olives. Sprinkle the remaining cheese over the toppings.
- Fold over the other half of the tortilla over the toppings to form half a circle and press down.
- Carefully place the pizzadilla in a preheated skillet over medium heat and cook until brown and crispy on the bottom, about 2-3 minutes. Carefully flip the pizzadilla over and cook until brown and crispy on the other side, about 2-3 more minutes.
- Repeat with the remaining tortillas. Slice each pizzadilla into thirds. Serve with the remaining pizza sauce for dipping.
Notes
- Spray the skillet with a small amount of cooking oil before frying for a crispier pizzadilla crust.
