Description
Plaza III Steak Soup combines a creamy beef broth base made by forming a roux from butter and flour, then adding beef consommé. Into this flavorful base go diced fresh vegetables—carrots, celery, onions, and canned tomatoes—as well as frozen mixed vegetables, which provide variety and texture. Ground beef, browned and drained, adds protein and depth of flavor to the soup.
The soup is seasoned with kitchen bouquet sauce, a beef flavoring, black pepper, a bouillon cube, and monosodium glutamate to enrich the umami character. The mixture is brought to a boil, then reduced to simmer until the vegetables become just tender. This slow cooking melds flavors and produces a slightly thickened, smooth broth.
This soup can be served as a substantial starter or main dish on cooler days. It’s rich and filling with a balance of tender vegetables and hearty beef. The combination of fresh and frozen vegetables adds color and nutrition.
Ingredients
- 4 tablespoons butter
- 1/2 cup all-purpose flour
- 20 ounce beef consomme
- 1/4 cup carrot diced
- 1/4 cup celery diced
- 1/4 cup onion diced
- 1/2 cup canned tomatoes diced
- 3/4 teaspoon kitchen bouquet sauce
- 1 beef bouillon cube
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon monosodium glutamate aka MSG, Accent
- 5 ounces mixed vegetables frozen
- 1/2 pound ground beef browned and drained
Instructions
- Place the butter in a soup pot and allow it to melt without browning. Add flour and stir to form a smooth paste. Cook the mixture over medium heat, without browning for 3 minutes, stirring constantly.
- Add the consomme to the roux and stir until smooth and slightly thickened. Bring to a full boil. Add the fresh vegetables, tomatoes, and seasonings and allow it to regain a boil. Reduce the heat and simmer until the vegetables are just barely tender. (This should take about 20 to 30 minutes.) Add the frozen vegetables and browned ground steak. Simmer an additional 15 minutes.
