Poached Salmon with Capers and Hollandaise Sauce

Poached Salmon with Capers and Hollandaise Sauce features tender salmon fillets gently cooked in simmering white wine, water, lemon, shallots, dill, and capers. The dish is served topped with a rich Hollandaise sauce and garnished with extra capers and chopped dill for a fresh, tangy finish.

Description

This recipe begins by cutting fresh salmon into fillets and seasoning them with kosher salt and freshly ground black pepper. The poaching liquid consists of a delicate simmering mix of dry white wine and water, infused with sliced lemon, shallots, sprigs of dill, and non-pareil capers. The salmon is gently cooked in this aromatic broth until flaky and tender, usually about 8 to 10 minutes.

The poached salmon is then plated with the cooking aromatics and topped with prepared Hollandaise sauce, a classic emulsion of egg yolks, lemon juice, and melted butter that adds richness and creaminess. Additional capers and chopped dill garnish provide bursts of tang and freshness that complement the mild, flaky fish.

This dish is elegant yet straightforward, suitable as a light main course or part of a refined meal. Poaching in wine and aromatics helps retain moisture and infuse subtle flavors without overwhelming the salmon’s natural taste.
