Poğaças - Turkish Cheese Filled Pastries

Poğaças are Turkish savory pastries filled with a mixture of crumbled feta cheese and chopped parsley. The dough is made from flour, butter, canola oil, yogurt, baking powder, and salt, kneaded until elastic. Dough pieces are filled, shaped, brushed with egg wash, sprinkled with nigella seeds, and baked until golden. These pastries are soft with a rich, buttery dough and a tangy, herbaceous cheese filling, often served as a snack or breakfast item.

Description

Poğaças combine a tender, well-kneaded dough with a feta cheese and parsley filling for a flavorful, handheld treat. The dough contains softened butter and oil for richness, yogurt for moisture and slight tang, and baking powder to aid lightness. The salt and nigella seeds add savory notes and texture contrast.

The cheese filling blends crumbled feta with fresh parsley, providing salty and herbaceous flavors enclosed in each pastry. Dough is divided into small pieces, flattened, filled, then folded into a half-moon shape ensuring a tight seal to prevent leaks during baking.

After arranging on a parchment-lined baking sheet, the pastries are brushed with an egg wash for a glossy finish and sprinkled with nigella seeds before baking at moderate heat until golden brown. Yielding about 25-28 pastries, they are typically enjoyed as a breakfast item or snack with tea.
