                                Ingredients
- 1 cup polenta , or medium yellow cornmeal
 - 5 cups water
 - 2 tablespoons butter (optional)
 - salt (to taste)

Instructions
- In a large saucepan, bring the water to a boil.
 - Once boiled, gradually pour the polenta into the hot water while whisking to avoid lumps.
 - Stir the polenta constantly until it begins to thicken, then reduce the heat to its lowest setting.
 - Cook over low heat for at least 40 minutes or until the polenta begins to pull away from the side of the pan, stirring occasionally with a wooden spoon.
 - Add butter (optional) and salt (to taste) and stir until melted and incorporated.
 - Serve immediately.
