  • 16 ounces pineapple canned, crushed
  • 6 ounces raspberry gelatin
  • 2 cups buttermilk
  • 8 ounces Cool Whip thawed

Instructions

Prepare the Mold:

  1. If you're planning to unmold the jello onto a serving plate, select a mold and thoroughly coat the inside with cooking spray. Wipe out any excess with a paper towel.

Prepare the Jello Mixture:

  1. Place the crushed pineapple with its juice in a medium saucepan.
  2. Add the jello and stir together.
  3. Bring to a boil over medium-high heat.
  4. Remove pan from the heat and set it aside to cool.
  5. When the pineapple and jello mixture has cooled to room temperature, add the buttermilk and stir together until well combined.
  6. Fold in the Cool Whip.
  7. Pour into prepared decorative mold or a 9x13 baking dish and refrigerate until set.

Notes

  • Non-mold option: Pour mixture into a 9x13 pan to cut into squares for easier serving.
  • Store leftovers in the refrigerator covered with plastic wrap or airtight container for 4 to 5 days.
