Ingredients
- spring mix salad five cups
- 2 apple Fuji or Gala cored and sliced (drizzle with the juice of half a lemon to prevent browning
- 1 cup pomegranate seeds
- 1 beet sliced (Trader Joe's sells them, cooked, packaged
- 1 Tablespoon orange zest
- ½ cup orange juice 2-3 large oranges, fresh squeezed
- 2 Tablespoons extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Prepare salad using spring mix, apples, pomegranate seeds, and beets.
- Mix remaining ingredients into a dressing, and drizzle over salad.
