Pomegranate Cherry Parfait

The Pomegranate Cherry Parfait combines fresh pomegranate arils and chopped cherries cooked gently with pomegranate juice to soften their texture and deepen the flavor. Layered with plain or Greek yogurt and topped with crunchy granola, this parfait balances tartness and sweetness with creamy and crunchy elements, offering a refreshing and visually appealing treat. The preserved whole cherries atop add a decorative touch, making it suited for a light breakfast or snack.

Description

Pomegranate Cherry Parfait blends the jewel-like seeds of a pomegranate with juicy cherries simmered in pomegranate juice until tender. These softened fruits provide a slightly sweet and tart base that contrasts nicely with creamy plain or Greek yogurt layered throughout. Sprinkling granola on top adds a satisfying crunch to the smooth yogurt and fruit combination. The assembly in layers offers distinct texture contrasts with each spoonful.

The fruits' natural flavors are highlighted without additional sweeteners, making the parfait refreshing and subtly sweet. The cooking step softens fruit and concentrates the flavor, while layering preserves the bright colors and textures. Garnishing with whole cherries on top provides a visually appealing finish.

This parfait is well suited to be served chilled for breakfast, a midday snack, or a light dessert. Its composition offers a balance of protein from yogurt and fiber from fruit and granola.
