Pomegranate Guacamole
Description
The recipe calls for ripe avocados mashed to desired chunkiness combined with freshly diced red onion, jalapeño, cherry tomatoes, and chopped cilantro for a fresh and layered flavor. Pomegranate seeds introduce a juicy and slightly tart note contrasting the creaminess of the avocado. Lime juice is added for acidity, along with chile lime seasoning and a pinch of salt to enhance the flavors.
This guacamole is prepared by first dicing the produce and removing pomegranate seeds, then mashing the avocado with lime juice and seasoning. The fresh ingredients are folded in gently to preserve texture and juiciness. It is served immediately or stored carefully to minimize browning, maintaining its vibrant color and freshness.
This version of guacamole works well as a snack with chips or as a topping over tacos, grilled chicken, fish, or sandwiches, bringing a mixture of creamy, tangy, spicy, and fruity notes.
To preserve color when refrigerating, it is recommended to place plastic wrap directly on the surface, removing air pockets before sealing. Serve fresh for best texture and flavor.
Ingredients
- 3-5 whole avocado mashed, ripe
- ½ pomegranate seeds only
- ½ cup red onion diced
- 1 jalapeño deseeded, small
- 1 cup cherry tomato diced
- ¼ cup cilantro finely chopped
- 1 lime juiced
- ½ tbsp chile lime seasoning
- salt to taste, heavy pinch
Instructions
- First prepare your produce: Finely dice red onion, cilantro, jalapeño and tomatoes. Remove the pomegranate seeds from the peel. Slice avocados in half and scoop out the inside flesh.
- Add the avocados, lime juice, and seasoning into a large bowl. Mash avocados together using a large fork or potato masher. If you like a chunkier guac, do less mashing.
- Pour in the guacamole fixings: tomatoes, onions, pomegranate, and cilantro. Stir together. Give it a taste test and add more kosher salt or lime juice if necessary.
- Squeeze fresh lime juice over top, garnish with pomegranate seeds, and sprinkle with sea salt. Add the fresh guacamole to a serving bowl. Serve fresh or in a fun way, like on a pile of tortilla chips!
Notes
- Best consumed fresh to avoid browning; refrigeration with plastic wrap pressed against the guacamole surface helps preserve color.
- This guacamole complements chips, fish tacos, grilled chicken, turkey sandwiches, and burgers.
