Description
This cocktail starts by moistening the rim of a champagne glass with sliced lime, then dipping it into granulated sugar to create a decorative and flavorful rim. The glass is filled mostly with a dry champagne or sparkling wine, ensuring dryness to balance the sweetness of the pomegranate juice added afterward.
The mixture of sparkling wine and pomegranate juice produces a light, fizzy drink with bright, fruity notes and a hint of tartness. Optional pomegranate seeds add a jewel-like garnish and slight texture, while a sprig of fresh rosemary provides an herbal aroma that complements the berry flavor. The use of a dry sparkling wine prevents the cocktail from becoming overly sweet, maintaining balance.
Ingredients
- 1 lime sliced, or orange
- 3 Tbsp granulated sugar
- 1 ml champagne or sparkling dry wine
- 2 cups pomegranate juice
- 1/2 cup pomegranate seeds (optional)
- rosemary optional, sprigs, fresh
Instructions
- Run the sliced lime around the rim of each champagne glass.
- Add sugar to a shallow dish and dip the rim of the glass into the sugar.
- Fill glasses 2/3 to 3/4 of the way full of champagne. Fill the glasses the rest of the way with pomegranate juice.
- If using, garnish drinks with a spoonful of pomegranate seeds and a sprig of fresh rosemary.
Notes
- Use a dry Brut champagne, prosecco, or cava for the best balance of flavor in this cocktail.
