This light and fresh Pomegranate Salad is a great accompaniment to any meal. With the crunchy nuts and pop of fresh pomegranates, it’s full of great flavor and texture that you will crave more of!

Ingredients

Servings
  • ½ cup walnuts
  • ½ cup pecan
  • 6 cups greens of choice
  • 2 red apple diced
  • 2 cups pomegranate arils
  • ½ cup dried cranberry
  • ¼ cup pumpkin seeds

Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon parsley
  • 1 teaspoon honey
  • ½ teaspoon salt sea salt
  • ½ teaspoon black pepper ground
  • 2 garlic peeled and minced, cloves

Instructions

  1. Add all salad ingredients in a large bowl.
  2. Stir all dressing ingredients in a small bowl and add to the salad bowl.
  3. Toss all together.
  4. Serve.
