Pomegranate Salad Dressing Recipe
Description
The Pomegranate Salad Dressing Recipe features a combination of olive oil and balsamic vinegar (either regular or pomegranate flavored) as the base. Minced shallots add sharpness, while orange juice and pomegranate juice contribute fresh fruitiness. Dijon mustard emulsifies the dressing, and optional extra balsamic vinegar deepens the flavor. Kosher salt seasons the mix. The dressing can be shaken together in a jar or blended for a smooth finish.
This dressing brings a vibrant, slightly sweet and tangy profile with notes from the citrus and pomegranate, balanced by the mustard's mild pungency and shallot's aroma. It coats salad greens well, adding a fresh flavor lift that works particularly well with cheeses like feta or blue cheese if desired.
It's suitable to make ahead and chill to let flavors meld. Bringing it to room temperature before serving ensures best texture and taste. It pairs nicely with various salad ingredients, enhancing both simple and more complex salads.
Variations include swapping oils for different flavors, adjusting vinegar types, or adding honey or maple syrup for sweetness. The dressing keeps refrigerated for up to a month.
