Poor Man's Steak

Report
Poor Man's Steak creates seasoned ground beef patties coated in flour, quickly pan-fried to brown and then baked in mushroom soup gravy. The combination yields tender, flavorful patties bathing in a creamy sauce. It’s a comforting dish replicating classic steakhouse flavors using pantry staples and simple cooking methods.

Description

This recipe mixes ground beef with saltine cracker crumbs, milk, salt, black pepper, Italian seasoning, cayenne pepper, and garlic powder, forming the mixture into patties larger than the desired final size to compensate for shrinkage during cooking. Coating the patties in flour helps develop a crust when pan-fried briefly in butter, enhancing texture and flavor.

After searing, the patties are arranged in a baking dish and smothered with a blend of condensed cream of mushroom soups and milk, providing rich, creamy gravy. Covered baking ensures even cooking and tenderness, reaching an internal temperature of 160°F.

Once out of the oven, fresh parsley adds color and freshness to the saucy patties. The dish suits a main course served with sides like mashed potatoes or vegetables, offering a hearty home-cooked meal.

Using lean ground beef reduces grease, producing a cleaner sauce, and leftover cooked steaks can be refrigerated for up to five days.

Ingredients

Servings

FOR THE STEAK:

  • 2 lbs ground beef
  • 1 cup saltine cracker crumbs
  • 1 cup milk whole
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 cup flour for dipping
  • 1 Tbsp butter

FOR THE GRAVY:

  • 2 condensed cream of mushroom soup 10.75 oz each, canned
  • 1 1/2 cups milk whole
  • 2 tbsp parsley chopped, fresh

Instructions

  1. Preheat the oven to 350 degrees F and spray a 9X13 baking dish with non-stick cooking spray.
  2. Mix together the hamburger meat, cracker crumbs and seasoning in a large mixing bowl (using your hands).
  3. Then form the mixture into 8 hamburger patties.  Then roll the patties in the flour.
  4. Melt the butter in a large skillet and fry the patties in the butter over medium high heat for 2-3 minutes on each side until they are browned.
  5. Then move the patties to the baking dish.
  6. In a medium size bowl, whisk together the cream of mushroom soups and the milk.  Pour this mixture evenly over the top of the patties in the baking pan.
  7. Cover the baking dish with aluminum foil and bake for 50-55 minutes until the steaks reach an internal temperature of 160 degrees F.
  8. Remove, top with the fresh parsley and then the steaks are ready to serve and enjoy!

Notes

  • Use lean ground beef to limit greasiness in the patties and gravy.
  • Form patties larger than desired to allow for shrinkage during cooking.
  • Store leftovers in an airtight container refrigerated for up to five days.
