Poppy Seed Chicken
Description
This recipe uses a roux base with butter, flour, and chicken broth combined with light cream and softened cream cheese to form a smooth, velvety sauce enhanced by diced onion, minced garlic, and poultry seasoning. The shredded chicken and poppy seeds mix into the sauce, seasoned with salt and pepper. The mixture goes into a baking dish topped with crushed cornflakes or buttery crackers mixed with melted butter for a crunchy finish.
Baking at 375°F brings the casserole to a hot, bubbly state with a golden topping and tender interior. Serving it over rice or pasta complements the creamy textures and infuses the meal with hearty appeal. The modest poppy seed inclusion provides subtle flavor and texture to the chicken blend.
When making the cream sauce, add liquids gradually to maintain smoothness and keep the heat moderate to avoid dairy scorching. Room temperature cream cheese blends in easier. If preparing ahead, keep the crunchy topping separate until just before baking to preserve texture.
Ingredients
- 3 cups chicken cooked shredded
- 1 ½ tablespoons poppy seeds
Cream Sauce
- 1 onion diced
- 1 clove garlic minced
- ¼ teaspoon poultry seasoning
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 cup chicken broth
- ¾ cup light cream
- 4 ounces cream cheese
- ⅓ cup sour cream
Topping
- ½ cup cornflakes or buttery round crackers, crushed
- 3 tablespoons butter melted
Instructions
- Preheat oven to 375°F.
- In a saucepan, cook onion, garlic, and poultry seasoning in butter over medium heat until tender. Add flour and cook 1-2 minutes. Stir in broth and cream a little bit at a time until smooth. Stir in cream cheese and sour cream and cook until melted and smooth.
- Remove from heat and combine chicken, poppy seeds, cream sauce, and salt & pepper to taste.
- Spread into an 8x8 serving dish. Combine topping ingredients and sprinkle over top.
- Bake 20-25 minutes or until hot and bubbly.
- Serve over rice or pasta.
Notes
- When making the cream sauce, add liquid gradually and whisk over medium heat to keep it smooth and avoid burning the dairy.
- Use room temperature cream cheese for easier incorporation into the sauce.
- If preparing in advance, store the crunchy topping separately and add it only before baking to maintain crispness.
