  • 2 leeves Ritz crackers
  • 1/2 cup butter melted
  • 1 tablespoon poppy seeds
  • 10.5 ounces cream of chicken soup or condensed cream of chicken soup substitute, condensed
  • 12 ounces sour cream
  • 3 tablespoons Parmesan Cheese

Instructions

  1. Crush the 2 sleeves of Ritz crackers (about 2 ½ cups).
  2. Stir melted butter, 1 ½ cups crushed Ritz crackers and poppy seeds together in a bowl.
  3. Fold in chicken, cream of chicken soup, and sour cream until well blended.
  4. Pour mixture into a 9x13 inch pan.
  5. In a separate bowl, mix remaining 1 cup of Ritz crackers and Parmesan cheese.
  6. Spread Ritz cracker topping evenly over casserole.
  7. Bake for 40 minutes at 350 degrees.

Notes

  • If cream of chicken soup is unavailable, cream of celery or cream of mushroom soup can be used as a substitute.
