Poppy Seed Chicken Casserole
Description
This Poppy Seed Chicken Casserole features bite-sized pieces of chicken bathed in a creamy mixture of condensed cream of chicken soup, sour cream, and poppy seeds which add a subtle nutty note. The mixture is combined thoroughly and poured into a casserole dish.
A topping of crushed Ritz crackers mixed with melted butter and poppy seeds, combined with shaved Parmesan cheese, is spread evenly over the chicken mixture. This creates a golden, crisp crust when baked for 40 minutes at 350 degrees, contrasting with the smooth, rich filling beneath.
The casserole is versatile in protein choice, accommodating fresh chicken breast, canned chicken, or leftovers such as roast chicken, making leftovers into a new dish. Variations in soup base such as cream of mushroom or cream of celery offer flavor alternatives.
Casserole leftovers store well and can be reheated for convenient meals. Substitutes for the Ritz cracker topping include bread crumbs or corn flakes if needed.
Ingredients
- 3 pounds chicken breast cut into 1 to 2 inch cubes
- 2 leeves Ritz crackers
- 1/2 cup butter melted
- 1 tablespoon poppy seeds
