Porcupine Meatballs

Porcupine Meatballs are ground beef meatballs combined with uncooked Basmati rice and minced onion, cooked in a tomato and Bloody Mary mix sauce. The dish features browned meatballs simmered until tender rice is cooked through. The sauce is flavored with Worcestershire sauce and spices, offering a hearty, textured, and subtly spiced comfort meal.

Description

This recipe involves mixing ground chuck with uncooked white Basmati rice, minced yellow onion, celery seed, garlic powder, salt, pepper, and Bloody Mary mix to introduce flavor and moisture. The mixture forms meatballs that are pan-seared in ghee until browned on all sides, which adds a caramelized crust.

The sauce combines tomato sauce with additional Bloody Mary mix, water, and Worcestershire sauce, simmered in the skillet with browned bits scraped off for depth. Meatballs cook covered in the sauce over moderate heat until the rice inside them is tender. The balance of the Worcestershire and Bloody Mary mix gives the sauce a savory and slightly tangy profile.

Porcupine Meatballs are typically served over garlic mashed potatoes or rice, highlighting their rich sauce and textured filling. The dish offers a filling, homestyle meal with a combination of soft cooked rice and juicy beef inside a fragrant tomato sauce.

Ghee can be substituted with a blend of olive oil and unsalted butter if preferred. The Bloody Mary mix referenced contains flavors of lobster and wasabi, which contribute unique tasting notes.
