Ingredients

Servings
  • 3 tablespoons olive oil
  • 4 pork chops about 2 pounds total, thick cut, boneless
  • 4 medium potato washed and cut into 3/4" cubes, red

For the sauce:

  • 3 tablespoons olive oil
  • 1/4 cup coconut aminos (or soy sauce)
  • 1/2 teaspoon garlic minced
  • 2 tablespoons brown mustard spicy
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper or to taste
  • parsley optional, fresh, for garnishing

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat 3 tablespoons oil in a skillet over medium heat.
  3. Once the oil is hot, place the pork chops in the skillet and sear (lightly browon each side. (This will take just 1-2 minutes on each side if the oil is hot.)
  4. Spray a large (10x15) baking pan with cooking spray.
  5. Arrange the pork chops on the bottom of the baking pan.
  6. Place the washed and cubed potatoes in a large bowl.
  7. In a small bowl, combine the oil, coconut aminos, garlic, mustard, salt and pepper for the sauce.
  8. Pour this sauce over the potatoes and toss to coat.
  9. Arrange the seasoned potatoes around the pork chops, making sure they are mostly sitting on the bottom of the pan and not on top of the pork chops. They will cook more evenly if they are arranged around the pork chops.
  10. Bake for 30 minutes, or until the pork tests at least 145º Fahrenheit in the thickest part. The potatoes should also be tender.
  11. Sprinkle with parsley if desired.
