Description

This recipe begins with a flavorful sauce combining reduced-sodium soy sauce, ketchup, Worcestershire sauce, sugar, and red pepper flakes to provide a sweet, tangy, and mildly spicy base. Pork loin strips are cooked until no longer pink, then removed from the pan. Vegetables including broccoli, coleslaw mix, bamboo shoots, and garlic are stir-fried until crisp-tender.

The pork and sauce are added back to the pan, heated through, then combined with cooked ramen noodles from which the seasoning packets have been discarded. The noodles absorb the sauce and integrate the flavors and textures of the pork and vegetables.

  • 1/4 c. soy sauce reduced-sodium
  • 2 Tbsp ketchup
  • 2 Tbsp Worcestershire sauce
  • 2 tsp sugar
  • 1/4 tsp red pepper flakes crushed
  • 3 tsp canola oil divided
  • 1 lb pork loin chops cut in 1/2 in strips, boneless
  • 1 c. broccoli florets
  • 4 c. coleslaw mix
  • 1 can 8oz bamboo shoots, drained
  • 4 garlic minced, cloves
  • 2 pkg 3 oz each Ramen noodles

Instructions

  1. Whisk the first five ingredients together in a small bowl.
  2. In a large skillet, heat 2 tsp oil over medium heat. Add pork and cook until no longer pink. Remove from pan.
  3. Add remaining oil to pan and cook broccoli for 3 minutes. Add coleslaw mix, bamboo shoots and garlic. Stir Fry 3-4 minutes or until broccoli is crisp-tender. Stir in soy sauce mixture and pork. Heat through.
  4. Meanwhile, cook noodles according to package directions. Discard seasoning mix from Ramen noodles. Drain and then add noodles to the pork mixtures.
  5. Toss to combine.
