Ingredients

Servings
  • 2 tablespoons light brown sugar
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika Note 1, sweet
  • 2 teaspoons thyme
  • 2 teaspoons salt or kosher salt, fine sea salt
  • 1 teaspoon black pepper ground
  • 1 teaspoon rosemary Note 2

Instructions

Pork roast seasoning:

  1. Measure all the spices in a medium bowl. 2 tablespoon brown sugar + 2 teaspoon garlic powder + 2 teaspoon onion powder + 2 teaspoon sweet paprika +2 teaspoon thyme + 2 teaspoon salt + 1 teaspoon pepper + 1 teaspoon rosemary
  2. Mix with a spoon or a whisker until well combined, ensuring there are no clumps or pockets of individual spices.
  3. Store: Transfer to an airtight container and store in a dark cool place away from direct sunlight.

How to use it?

  1. Pat the pork roast dry with paper towels.
  2. Sprinkle the seasoning mixture over the meat and rub it into it, ensuring it is evenly coated on all sides. Let sit for a few minutes to allow the flavors to penetrate.
  3. Cook the pork roast according to your recipe.

Notes

  • Paprika: You can use 1 teaspoon of sweet and 1 teaspoon of smoked paprika powder if you like. Use the best quality you can afford; cheap paprika is entirely tasteless.
  • Add about ½ teaspoon of red pepper, red chili flakes, or cayenne pepper to taste for a spicy version.
  • There is enough seasoning for 2 pork roasts.
