Description
This Pork Spiedies recipe starts with 3 pounds of cubed meat—pork loin or tenderloin is traditional, but other meats like chicken or beef also work. The marinade combines olive oil, lemon juice, vinegar, minced garlic, dried thyme, oregano, basil, salt, and pepper, which together tenderize and flavor the meat over a long 1 to 3 day refrigeration period. Soaking the marinade allows deep flavor absorption.
Before grilling, meat is threaded onto soaked wooden skewers for even cooking. The grill is heated to medium-high, and the skewers cook for about 8 minutes total, turning every 2 minutes to develop a lightly charred exterior while maintaining juicy interiors. The spiedies are served by placing the meat directly onto slices of Italian bread, which acts as a sandwich base without added condiments, although garlic aioli is suggested if desired.
Traditional to this preparation is the ample marinating time to achieve tender, flavorful meat. Optional substitutions include using Italian seasoning instead of individual herbs for simplicity. Serving on hoagie rolls is also a common variation.
Ingredients
- 3 pounds meat chicken breast, pork loin, pork tenderloin, beef sirloin or turkey breast
- 1 cup olive oil
- 1/4 cup lemon juice
- 3/4 cup vinegar
- 4 garlic minced, cloves
- 1 1/2 teaspoon thyme dried
- 1 1/2 teaspoon oregano dried
- 1 1/2 teaspoon basil dried
- 1 teaspoon salt
- 1 teaspoon black pepper
- Italian bread sliced
Instructions
- Combine the olive oil, lemon juice, vinegar, minced garlic, thyme, oregano, basil, salt and pepper in a bowl and mix well.
- Cut the meat into cubes and add it to a zippered bag. Pour the marinade over top cover the meat.
- Let the meat marinade, refrigerated, for 1 to 3 days. Turn the bag over occasionally in the refrigerator.
- If you are using wooden skewers soak them in water for 30 minutes before assembling the spiedies.
- Preheat your grill on medium-high.
- Remove meat from the marinade and thread onto skewers. Put 6-7 pieces per skewer, enough to fill your bread or bun. Grill for 8 minutes, turning every 2 minutes.
- To serve, pick up a pieces of bread, put the skewer on the bread, fold the bread over and pull the skewer out.
- These are traditional served without condiments, but if you want to include a sauce garlic aioli is my favorite.
Notes
- Marinate the meat for at least 24 hours; shorter times reduce flavor and tenderness.
- Italian seasoning can replace the oregano, thyme, and basil with 1 tablespoon total.
- Soak wooden skewers for 30 minutes before grilling to prevent burning.
- Serve on Italian bread or hoagie rolls, traditionally without condiments, but garlic aioli is a popular addition.
