Description

The recipe begins by sautéing onions, garlic, and fresh spinach until soft and lightly cooked. The cooked vegetables are cooled and mixed with mashed black beans, chopped mushrooms, Worcestershire sauce, and Montreal steak seasoning to build flavor and texture. Eggs and panko breadcrumbs bind the mixture, while crumbled feta adds a creamy, salty note. Patties are shaped into small rounds and pan-fried until both sides are crisp and golden. They are then placed on a baking sheet for finishing in a 375°F oven, ensuring they cook through evenly without drying out.

Ingredients

  • ¼ cup onion chopped small
  • 4 cloves garlic minced
  • 2 cups spinach chopped, fresh
  • 3 cups black beans rinsed
  • 2 cups portabella mushroom chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Montreal steak seasoning
  • 3 egg beaten, large
  • ¾ - 1 cup panko bread crumbs or gluten free option
  • ½ cup feta cheese crumbled
  • 2 tablespoon coconut oil or olive oil

Instructions

  1. In a large skillet, melt coconut oil over medium heat.
  2. Add onions and garlic and sauté for 5-6 minutes or until translucent.
  3. Add in the spinach and cook on medium heat for 3-5 minutes until the spinach is wilted.
  4. Remove spinach from heat and allow to cool.
  5. In a large bowl add 1 can of black beans and mash them with a fork.
  6. Then add in the chopped mushrooms, additional can of beans, Worcestershire sauce and steak seasoning.
  7. Add in eggs, panko, feta and cooled onion & spinach mixture.
  8. Mix until combined well.
  9. Form into 8 - 10 patties. I roll them into a small ball the press them into a patty.
  10. Add enough coconut oil or olive oil to the bottom of a saute pan and heat to medium-high.
  11. When the oil is hot, add the patties keeping a small space between them so they do not stick together.
  12. Cook for 4-5 minutes until golden brown.
  13. Then flip and cook for an additional 4-5 minutes until golden brown.
  14. Preheat oven to 375 degrees F
  15. Place patties on a parchment paper lined baking sheet.
  16. Bake for 10 minutes, flip and continue baking for another 10 or until they are golden brown and crispy.
