Ingredients

  • For Patty Dough:
  • 2 cups wheat flour 280 grams
  • 2 cups of water 480 grams
  • 2 tablespoons butter
  • 2 lemon zest, units
  • 1 pinch salt
  • For the filling:
  • 1 onion unit
  • 200 grams Shrimp
  • 2 shrimp broth tablets
  • 200 milliliters milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 tablespoons of green scent
  • 1 egg yolk, unit
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 lemon unit
  • To bread:
  • 4 egg units
  • 300 grams breadcrumbs

Instructions

  1. Start by preparing the shrimp patties dough by placing the water, salt, butter and lemon zest over a low heat. When it comes to a boil, remove the zest, turn it off, add the flour and stir well until the dough starts to come off the pan. Reserve.
  2. Then place the shrimp to be cooked in salted water. If you have opted for whole shrimp, at the end reserve the broth to replace the milk and shrimp broth tablet and peel the shrimp so that only the kernels are used.
  3. When they are cooked, continue the shrimp patties recipe by chopping the onion and putting it to sauté in butter. Add the shrimp (cut into pieces if they are large), the milk and the tablet or cooking broth, and the flour.
  4. Let the previous preparation cook until it thickens, stirring constantly. Then add the remaining ingredients: egg yolk, green scent, salt, pepper and the juice of a lemon. Stir, turn off the heat and let it cool.
  5. The next step in the shrimp patties recipe is to sprinkle a clean, smooth surface with flour and roll the dough onto it with the help of a rolling pin. Cut dough rings and place a portion of the cold stuffing in them, seal with a fork.
  6. At this stage you can choose to freeze the shrimp patties and cook them later, or use them now. To do this, pass them through a container with beaten eggs and then wrap them in the breadcrumbs. Place to fry in hot oil.
  7. Once they are cooked and browned, let the patties drain on a paper towel and serve when they cool.
