Pot Roast Seasoning
Description
The seasoning mix consists of multiple dried spices and herbs including paprika (sweet and smoked), brown sugar for mild sweetness, garlic and onion powders for savory notes, and dried rosemary, thyme, oregano, basil, and parsley for aromatic herbal complexity. Salt and black pepper provide essential seasoning and balance. Two bay leaves add subtle earthy flavor when cooked with the roast.
Combined and stored in an airtight jar, this dry rub can be kept for several months, allowing it to be prepared in advance and used as needed. The recipe suggests using about 2 tablespoons of the rub per pound of meat, rubbing the pot roast evenly before browning in a heavy pot like a Dutch oven. Incorporating the bay leaves during the cooking process enhances the flavor profile of the finished roast.
This seasoning blend is versatile for pot roast recipes that involve searing meat followed by slow cooking with vegetables and liquids, providing a well-rounded and inviting aroma and taste to the dish. It simplifies repeat seasoning by combining complementary herbs and spices in one blend.
