Description

The casserole begins with a mixture of ground beef or turkey combined with finely chopped onion, garlic, breadcrumbs, Worcestershire sauce, egg, ricotta cheese, BBQ sauce, and sweet chili sauce to form a flavorful meatloaf base. This mixture is spread evenly in a baking pan and baked until cooked through.

While the meatloaf bakes, peeled and diced Yukon gold potatoes are cooked until tender, drained, then creamed with butter, sour cream, warm half and half, ranch seasoning mix, salt, and pepper to create a creamy and rich mashed potato topping.

Once the meatloaf is ready, any excess grease is discarded before layering the mashed potatoes evenly over the meat. The casserole is then topped with shredded cheddar and pepper jack cheeses, along with crumbled crispy bacon, and baked further until the cheeses melt and the topping is golden. This layered approach combines flavors and textures for a hearty meal that blends meat, creamy potatoes, sharp cheeses, and smoky bacon.

  • 1 1/2 pounds ground beef or turkey, lean
  • 1 onion very finely chopped, small
  • 4 cloves garlic minced
  • 1 cup seasoned bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 1 egg lightly beaten, large
  • 1/4 cup ricotta cheese
  • 1/4 cup BBQ sauce
  • 1/4 cup sweet chili sauce
  • 2 pounds potato peeled and diced, Yukon gold variety
  • 1/3 cup butter unsalted
  • 1/2 cup sour cream
  • 1/2 cup half and half warm
  • 1 oz ranch seasoning mix packet
  • 1 teaspoon kosher salt or to taste
  • 1 teaspoon black pepper or to taste, ground
  • 12 lices Bacon cooked until crispy and crumbled, thick cut
  • 1 cup cheddar cheese shredded
  • 1 cup pepper jack cheese shredded

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Spray a 9x13-inch pan with nonstick cooking spray and set it aside.
  3. In a large mixing bowl, combine the ground beef, onion, garlic, bread crumbs, Worcestershire sauce, egg, ricotta cheese, chili sauce, and BBQ sauce. Mix until thoroughly combined.
  4. Spread the beef mixture on the bottom of the pan in an even layer. Place in the oven, and bake for 40-45 minutes.
  5. While the meatloaf is cooking, add the potatoes to a large pot and cover with water, over medium-high heat. Cook until fork tender.
  6. Drain the water from the potatoes, and add the butter. Beat with a hand mixer to combine.
  7. Next, add the sour cream, warm half and half, ranch seasoning, and add salt and pepper to taste. Mix well to combine.
  8. Remove the meatloaf from the oven, and discard any excess grease.
  9. Spread the mashed potatoes in an even layer over the meatloaf, then sprinkle the cheddar cheese on top, half of the bacon pieces, and after that the pepper jack cheese.
  10. Return the meatloaf to the oven for an additional 15-20 minutes, until the potatoes are hot and the cheese has melted.
  11. Remove the pan from the oven, and garnish with the remaining bacon and chopped green onions.
  12. Serve as is or with your favorite side dishes.
