Potato, Ham and Tomato Frittata
Description
The frittata starts with sautéing thinly sliced potatoes and chopped onion together until the potatoes are browned and partially cooked. Diced ham is added to introduce a smoky, meaty element. Eggs mixed with fresh chives, salt, and pepper are poured over the mixture, allowing the eggs to flow between the potato slices for even distribution. Tomato slices are arranged on top before covering and briefly cooking on the stovetop to start setting the eggs. The dish is finished under a broiler to fully cook the eggs, set the frittata, and gently soften the tomatoes, resulting in a balanced combination of tender potatoes, flavorful ham, and fresh tomato acidity.
This frittata can be served warm as a main or a brunch dish. It pairs well with green salads or crusty bread for a complete meal.
Ingredients
- 1 -2 Tablespoon extra virgin olive oil
- 1 onion chopped, medium
- 2 baking potato peeled and thinly sliced (about 2 1/2 cups, medium
- 1 cup ham diced
- 1 tomato about 8 ounces, cut into thin slices
- 6 egg preferably organic, large
- ¼ cup chives coarsely chopped, fresh
- salt to taste, freshly ground
- black pepper to taste, freshly ground
Instructions
- Heat the oil in an 8- to 10-inch skillet (I used cast iron skillet) until hot but not smoking. Add the potatoes and cook, covered, for about 10 minutes, stirring occasionally to brown on all sides. Add the chopped onion to the skillet, mix with potatoes and cook for 1-2 minutes. Add the diced ham on top.
- Preheat the broiler. Meanwhile, break the eggs into a bowl. Add the chives, salt, and pepper and mix with a fork. Add the egg mixture to the skillet and stir gently with a fork for about 1 minute so the eggs flow between the potatoes. Add the tomato slices to the skillet, arranging them so they cover most of the frittata. Cover and cook for 1 minute.
- Slide the skillet under the broiler, 3 to 4 inches from the heat, and cook for about 3 minutes, until the eggs are set.
- Slide onto a plate, cut into wedges, and serve.
