  • 10 russet potato peeled and grated, medium
  • 2 onion peeled and grated, medium
  • 6 egg beaten, large
  • 1/3 cup vegetable oil
  • 2 1/4 teaspoons salt
  • 1 teaspoon black pepper
  • sour cream for serving (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the grated potatoes and onions. Stir in the eggs, vegetable oil, salt, and pepper until well mixed.
  3. Grease a 9x13-inch baking dish. Pour the potato mixture into the prepared baking dish and spread evenly.
  4. Bake in the preheated oven until the top is golden brown and crisp, about 90 minutes.
  5. Serve each portion topped with a dollop of sour cream, if desired.
