Potato leek soup with mustard and nutmeg

Creamy and soft soup made from potatoes and leek. Combined with mustard, nutmeg, black pepper, parsley and chives. I used a mushroom powder to make a broth, but you can use Medical medium healing broth as well.

Ingredients
- 2 cups potato cubed (300 grams)
- 1 handful fresh parsley
- 2 cups leek sliced in half rings (200 grams)
- ½ handful fresh chives
- 1 tbsp mustard seeds
- 1 tsp nutmeg ground
- 2 bay leaves
- ¼ teaspoons black pepper freshly ground
- 4 to 5 juniper berries
- ½ teaspoons ground cumin seeds
- ½ teaspoons Turmeric
- 2½ cups water
- + 2 tbsp + 2 tbsp mushroom powder
- 2½ cups MM healing broth or chicken stock
Instructions
- Wash and dice the potatoes. You can leave the skin on if you wish.
- Put them in the soup pan with the water and mushroom powder or with the MM healing broth.
- Add the bay leaves, juniper berries, cloves and mustard seeds.
- Bring to the boil with the lid on. Then let it simmer.
- Wash and cut the leek in half rings.
- After 10 minutes simmering add the leeks to the potatoes. Put the lid back on and let simmer for another 10 minutes.
- Take out the bay leaves. The juniper berries can be hard to find, just leave them for now.
- Blend everything smooth with the immersion blender. But let some partial bits and pieces in tact. After the fist blending the berries will probably be more visible. Take them out, but if one or two get lost, it's not an big problem.
- Pour into the bowls. Top with the nutmeg, black pepper, torn parsley and cut chives.

Notes
- It's nice to use whole nutmeg and grate it just before serving. That smell!
