Potato Pancakes

Ingredients

  • 4 large potato Peeled and grated
  • 1 onion Finely grated
  • 2 egg
  • 4 tbsp plain flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • neutral cooking oil For frying, generic cooking oil

Instructions

  1. Grate the peeled potatoes using a fine grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  2. In a mixing bowl, combine the grated potatoes, finely grated onion, eggs, flour, salt, and black pepper. Mix well until all the ingredients are evenly combined.
  3. Allow the mixture to rest for 15 minutes. This helps the potatoes release more moisture, resulting in crispier pancakes.
  4. Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
  5. Take a spoonful of the potato mixture and carefully place it in the hot oil. Flatten it slightly with the back of the spoon to form a pancake shape. You can make multiple pancakes at once, but be sure not to overcrowd the pan.
  6. Fry the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
  7. Remove the cooked potato pancakes from the pan and place them on a plate lined with paper towels to remove excess oil.
  8. Continue this process until all the potato mixture is used, adding more oil to the pan as needed.
  9. Serve the potato pancakes hot, garnished with sour cream or applesauce if desired.
