Ingredients

Servings
  • 1 Tablespoon active dry yeast
  • 1 cup water warm
  • 1/2 cup butter softened, salted
  • 1/2 cup + 1 tablespoon granulated sugar
  • 2 teaspoons table salt
  • 2 egg large
  • 1 cup potato mashed
  • 5 1/2 to 6 1/2 cups all-purpose flour or bread flour

  1. Dissolve yeast and sugar in the warm water. Let it foam for 5 minutes.
  2. Add butter, sugar, salt, and eggs and mix well. Add mashed potatoes and mix again.
  3. Add flour, 1 cup at a time to make a nice dough that is not too sticky.
  4. Knead for 5 minutes.
  5. Cover and let rise for 1 hour until doubled in size.
  6. Punch down and shape into 24 rolls, placing in two 9x13" baking dishes or a large greased baking sheet.
  7. Let rise for 30-45 minutes, then bake at 350°F for 20-25 minutes. Butter the tops of the rolls and bake another 2 minutes.
