Description
This Potato Salad with Bacon starts by boiling cubed potatoes until fork tender. The creamy dressing is made from sour cream, mayonnaise, apple cider vinegar, Dijon mustard, and seasonings including garlic powder and sugar. Once the potatoes are drained, they are mixed immediately with the dressing to absorb flavor while warm.
Freshly cooked and crumbled bacon adds a salty, smoky bite. Celery and green onions provide texture and brightness, with shredded cheddar cheese giving a mild sharpness. Chopped fresh parsley or dill adds an herbal note if used.

Ingredients
- 6 cups potato or red potatoes, cut into 1-inch pieces, yellow, chopped
- 3 green onions thinly sliced
- 1 cup celery finely diced
- 1 cup cheddar cheese shredded
- 8 lices Bacon cooked and crumbled or chopped, or ½ cup real bacon bits
- parsley or fresh dill, for garnish, optional, chopped, fresh
Dressing
- ¾ cup sour cream not low fat
- ⅓ cup mayonnaise
- 1 ½ tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon dill or ½ teaspoon dried dill, optional, chopped, fresh
- 1 teaspoon granulated sugar
- ½ teaspoon garlic powder
- salt
- black pepper
- 2 tablespoons bacon drippings *optional, see note
Instructions
- Bring a large pot of salted water to a boil. Add chopped potatoes and boil 10-12 minutes or until fork tender.
- Whisk dressing ingredients in a small bowl. Add ½ teaspoon salt & ¼ teaspoon pepper.
- Once potatoes are cooked, drain well and place in a large bowl. Add dressing. Toss to combine.
- Add celery, green onions, cheese, and crumbled bacon. Mix well. Garnish with herbs if desired.
- Serve warm.
Notes
- This potato salad can be served warm or chilled; cool potatoes before dressing if served cold.
- Reserve bacon fat to stir into the dressing for enhanced flavor if cooking bacon fresh.
- If using real bacon bits, crisp them before adding for better texture and flavor.
