Potatoes Au Gratin

Potatoes Au Gratin is a layered dish of thinly sliced russet potatoes and onions baked in a garlic-infused whipping cream, topped with grated Gruyere and cheddar cheeses. The result is tender potatoes with a creamy, rich texture and a golden, browned cheese crust. Parsley adds a fresh garnish before serving.

Description

Potatoes Au Gratin begins by layering peeled, thinly sliced russet potatoes and thinly sliced onions in a buttered cast iron skillet or baking dish. Minced garlic is stirred into whipping cream, which is poured evenly over the layers. Gruyere cheese is added during layering, with cheddar cheese spread over the top before baking.

Baking at 350°F for about 1 hour and 15 minutes cooks the potatoes until tender and melts the cheese into a bubbly golden crust. Letting the dish stand after baking allows it to set before slicing. The combination of Gruyere and cheddar gives a rich, savory flavor with a slightly nutty note and sharpness on top.

This dish pairs well as a comforting side to roasted meats or vegetables and can be enriched with optional additions such as bacon, diced ham, or mushrooms as preferred.

Seasoning with salt and pepper is optional due to the saltiness of the cheeses; adjust seasoning per taste.

  • 1 tablespoon butter
  • 3 lb russet potato peeled & sliced ⅛" thick
  • 1 onion large, thinly sliced
  • 1 cup whipping cream
  • 2 garlic minced, cloves
  • 2 cups gruyere cheese grated
  • 1 cup cheddar cheese grated
  • 2 tablespoon parsley chopped

Instructions

  1. Preheat oven to 350°
  2. Butter a 12" cast iron skillet or baking dish.
  3. stir the garlic into the whipping cream.
  4. arrange ⅓ of the potatoes in the dish, overlapping them. layer ½ of the onion slices evenly over the potatoes. Pour ⅓ cup whipping cream over the layer, and spread ½ the Gruyere cheese. 
  5. Repeat the process in the step above.
  6. Arrange the remaining potatoes evenly over the top, and pour over the last ⅓ cup whipping cream, pressing the potatoes down so they are submerged in the liquid.  Arrange the cheddar cheese over the top.
  7. Bake 1 hr 15 minutes, until potatoes are tender and top is starting to brown.  Remove from oven and garnish with parsley.
  8. Let stand 15 minutes before slicing and serving.

Notes

  • Because cheese adds saltiness, additional salt is optional; add pepper to taste for seasoning.
  • Optional ingredients such as crumbled bacon, diced ham, mushrooms, or other vegetables can be added to enhance flavor and texture.
