For Jalapeño Sauce

  • 1 onion sliced, or 2 small ones, large
  • 2 Tablespoons butter or margarine
  • 2 lices pickled jalapeno
  • 1 Teaspoon jalapeno juice from the jar, pickled
  • salt
  • black pepper
  • 2 Cups whipping cream

For Gratin

  • 2 baking potatoes or 3 medium ones, big
  • 1 1/2 cups cheese you can use a blend or mozzarella, shredded
  • 2 Tablespoons Parmesan Cheese grated
  • salt
  • black pepper

Instructions

  1. Preheat Oven to 350 Degrees Fahrenheit

For Jalapeño Sauce

  1. In a big skillet, melt the butter or margarine over medium heat
  2. Toss in the onions and cook until they soften
  3. Add the jalapeño slices and the jalapeño juice. Cook for 1-2 minutes
  4. Pour in the whipping cream and let it simmer over low heat for 5 minutes

For Gratin

  1. Peel potatoes and slice into thin slices
  2. Arrange them in a scalloped shape, one potato slice overlapping the other in a medium casserole pan
  3. Season with salt and pepper
  4. Add 1/3 of the Jalapeño Sauce and top with 1/2 cup of the cheese
  5. Repeat the same pattern for 2 more layers
  6. Grate parmesan cheese on top
  7. Cover with foil
  8. Bake in the oven for 45 minutes to 1 hour 15 minutes or until fork tender
  9. Uncover
  10. Broil for 1-2 minutes or until the top is brown and bubbly
  11. Let it cool 10 minutes before cutting

  • Use an 8x8" pan for two layers or a medium casserole for three layers depending on quantity.
