Ingredients
For Jalapeño Sauce
- 1 onion sliced, or 2 small ones, large
- 2 Tablespoons butter or margarine
- 2 lices pickled jalapeno
- 1 Teaspoon jalapeno juice from the jar, pickled
- salt
- black pepper
- 2 Cups whipping cream
For Gratin
- 2 baking potatoes or 3 medium ones, big
- 1 1/2 cups cheese you can use a blend or mozzarella, shredded
- 2 Tablespoons Parmesan Cheese grated
- salt
- black pepper
Instructions
- Preheat Oven to 350 Degrees Fahrenheit
For Jalapeño Sauce
- In a big skillet, melt the butter or margarine over medium heat
- Toss in the onions and cook until they soften
- Add the jalapeño slices and the jalapeño juice. Cook for 1-2 minutes
- Pour in the whipping cream and let it simmer over low heat for 5 minutes
For Gratin
- Peel potatoes and slice into thin slices
- Arrange them in a scalloped shape, one potato slice overlapping the other in a medium casserole pan
- Season with salt and pepper
- Add 1/3 of the Jalapeño Sauce and top with 1/2 cup of the cheese
- Repeat the same pattern for 2 more layers
- Grate parmesan cheese on top
- Cover with foil
- Bake in the oven for 45 minutes to 1 hour 15 minutes or until fork tender
- Uncover
- Broil for 1-2 minutes or until the top is brown and bubbly
- Let it cool 10 minutes before cutting
