Potatoes O'Brien

Potatoes O'Brien features crisped red potatoes cooked with diced red and green bell peppers and onions. The vegetables are sautéed together in vegetable oil, creating a savory, colorful side dish. A splash of Worcestershire sauce adds a subtle depth of flavor. The potatoes develop a crust by cooking in a hot skillet, while the peppers and onions soften, making this a satisfying dish with contrasting textures and a tangy finish.

Description

Potatoes O'Brien offers a hearty combination of potatoes, red and green bell peppers, and onions sautéed to create a rustic side dish. The red potatoes are cut into large pieces and cooked in hot vegetable oil to develop a crisp outer crust while maintaining a tender interior. Adding diced bell peppers and onions introduces sweetness and moisture, balancing the textures. A final touch of Worcestershire sauce brings umami and a subtle tanginess that complements the natural earthiness of the potatoes.

The cooking method involves frequent tossing in a very hot skillet to ensure even browning without steaming the vegetables. This technique delivers a dish with crunchy edges and softened peppers and onions that meld into the mix without losing their shape. The colors of the peppers create visual appeal alongside the golden potatoes.

Potatoes O'Brien serves well alongside breakfast eggs, grilled meats, or can be part of a brunch spread. The Worcestershire sauce infusion makes it flavorful enough to stand as a side without additional seasoning. Serve immediately to retain the crisp texture and warmth.
