Poutine
Description
Poutine is a Canadian comfort dish featuring crispy fries covered in fresh cheese curds and a warm brown gravy. This version uses either freshly cooked or frozen fries as the base. The gravy is prepared by making a roux of butter and flour cooked briefly with onion powder and bouillon powders, then whisked with low-sodium chicken broth until thickened. The balance of salty, umami flavors in the gravy complements the mild, creamy curds.
The dish is assembled by placing fries in a serving container, topping with cheese curds, and ladling hot gravy over to partially melt the curds. The resulting experience is a combination of crunchy potato texture, creamy cheese, and flavorful gravy melding in each bite.
For variation, this recipe suggests swapping in sweet potato fries or adding toppings like pulled pork or bacon to enrich the dish further. The gravy can be made ahead or components frozen separately for convenience. Adjust gravy thickness with cornstarch slurry or additional broth as needed.
Ingredients
- 1 1/2 lbs French Fries (or 24oz bag frozen)
- 1 ½ cups cheese curds
Poutine Gravy:
- ¼ cup butter unsalted
- 1/4 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1 teaspoon beef bouillon
- 1 teaspoon chicken bouillon
- 2 cups chicken broth low-sodium
- salt freshly ground
- black pepper freshly ground
Instructions
- Fries: Cook according to recipe or package instructions.
- Gravy: Melt the butter in a saucepan over medium heat. Add the flour and cook for 1-2 minutes, stirring well. Add bouillons and onion powder then stir. Slowly whisk in the broth until smooth. Cook, stirring frequently, until thickened. Taste and season with salt and pepper, as needed. (Add a cornstarch slurry (cornstarch dissolved in a little water) if you want a thicker gravy, or add additional broth to thin the gravy, as needed). Remove from heat.
- Assemble: Add fries to a large serving bowl (or divide between 4 serving containers, for 4 individual servings). Top with cheese curds and ladle gravy on top. Grab a fork and enjoy!
Notes
- Prepare gravy up to 3 days in advance; store tightly covered in the refrigerator and reheat before serving.
- Fries, gravy, and cheese curds can be frozen separately for up to 3 months and then reheated as needed.
- You can substitute sweet potato fries for a different flavor profile.
- To make it a hearty meal, add toppings like pulled pork, steak, chicken, or crumbled bacon.
