Ingredients

  • 1 - 2 heads (~0.8lbs or 360g each) broccoli , cut into 2 - 4 cups florets
  • ½ cup water
  • 6 cloves garlic , minced
  • 1 tablespoon peanut oil
  • 1 tablespoon Chinese rice wine (Optional)
  • ~⅛ tsp – ¼ tsp Fine Sea Salt or table salt to taste

Instructions

  1. Pressure Cook Broccoli: Pour in ½ cup of cold running tap water. Place a steamer rack into the pressure cooker. Place the broccoli florets onto the steamer rack. Lock the pressure cooker lid and pressure cook at Low Pressure for 0 minutes. Turn off the heat and do a quick release. Open the lid carefully.
  2. Cool Broccoli: To stop the broccoli from cooking, quickly place the broccoli in an ice bath or place them under cold running tap water. Drain the water, set aside the broccoli to air dry.
  3. *Optional Stir-fry Step: If you have a wok and don’t mind washing it, we recommend doing the Sauté Stir-fry the Garlic & Broccoli Step with a wok on the stovetop over HIGH heat. The flavor will increase by threefold (estimated :P).
  4. Prepare Pressure Cooker: Remove the hot water and towel dry the inner pot. Heat up your pressure cooker (Instant Pot: press Sauté button and click the adjust button to go to Sauté More function). Make sure your pot is as hot as it can be when you place the garlic into the pot (Instant Pot users: wait until the indicator says HOT).
  5. Sauté Garlic & Broccoli: Add 1 tablespoon of peanut oil into the pot. Ensure to coat the oil over the whole bottom of the pot. Add in the minced garlic, sauté the garlic for roughly 25 - 30 seconds. Do not let the garlic burn. Pour in the air dried broccoli and (optional) 1 tablespoon of rice wine and stir for 30 seconds. Season with fine sea salt to taste (We added ~ 1/6 teaspoon of salt). Stir it around for another 30 seconds. Done!
  6. Serve and Enjoy: Serve the Pressure Cooker Broccoli with Garlic immediately with your favorite dishes!
