  • 2 large yam about 2 pounds, cut into 1-inch cubes, red
  • 1 pound carrot sliced
  • ½ cup orange juice
  • 1 ½ cup prune dried
  • ½ cup dried cranberries or raisins
  • 3 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • salt to taste
  • black pepper to taste

Instructions

  1. In a 6-quart electric pressure cooker, add in all the ingredients and stir together until well-combined.
  2. Place the lid on and turn the manual pressure on for 2 minutes. When it’s finished, let the pressure out using the quick release.
  3. If it’s more liquid than you’d like, keep the lid off and turn the saute button on until it evaporates to your liking. It shouldn’t be soupy.

Notes

  • Release the pressure as soon as cooking ends to prevent overly soft yams.
  • Leave yam peels intact to save prep time and keep nutrients.
