Pretzel and Sausage Stuffing with Beer

This stuffing recipe uses diced pretzel buns baked until crisp, then mixed with browned breakfast sausage, sautéed onions and celery, and a liquid mixture of beer and chicken stock flavored with fresh thyme. The combination yields a hearty stuffing textured by crispy pretzel cubes softened by the savory broth and beer, baked until golden.

Description

Pretzel and Sausage Stuffing with Beer features diced pretzel buns baked dry to a crunchy texture before being combined with a mixture of cooked breakfast sausage, onions, and celery. The vegetables are sautéed in butter, followed by deglazing the pan with beer and adding chicken stock and fresh thyme to create a flavorful liquid base. This liquid is gently stirred into the crisp pretzel pieces, allowing them to absorb moisture without turning mushy. The assembled stuffing is placed in a buttered baking dish, topped with butter, and baked until set and heated through. The beer adds a malty depth that complements the savory sausage and the unique chewiness of pretzel bread, making this stuffing a distinctive side for hearty meals.

Ingredients

Servings
  • 1/2 pound breakfast sausage
  • 8 cups pretzel buns from about 4 buns, diced
  • 1 cup onion diced
  • 1/4 cup celery diced
  • 1 Pilsner beer 11.2 ounce bottles are ok, too, 11.5 ounce can
  • 1/2 cup chicken stock
  • 1 tablespoon fresh thyme
  • 4 tablespoons butter unsalted

Instructions

  1. Preheat the oven to 275F.
  2. Arrange the diced pretzels in a baking tray in one layer. Bake for 30 minutes, turning halfway to ensure they bake evenly.
  3. When the pretzels are dried and crisp, remove the tray from the oven and let them sit out to cool.
  4. Increase the oven temperature to 350F.
  5. In the meantime, in a medium pot on stovetop over medium heat, melt 2 tablespoons of butter.
  6. Add the onions and celery. Saute until the onions are translucent.
  7. Add the sausage and cook until browned.
  8. Pour in the beer, and stir to deglaze the pan. Simmer a few minutes to let the alcohol evaporate.
  9. Add the stock, the thyme, and season with salt and pepper to taste.
  10. Gently stir in the dried pretzels to incorporate the liquid. This might take a few minutes, so work slowly and gently to get them combined without crushing the pretzel cubes.
  11. Butter a baking dish and arrange the pretzel stuffing inside it. Add 2 tablespoons of butter on top.
  12. Bake for 30-45 minutes until the top is golden brown and crispy.

Bom Apetite!!
